Simple Coconut Rice

Simple Coconut Rice, Origin: West Africa
480ml coconut milk
1 tsp dried,ground, crayfish (or prawns)
200g uncooked rice
400g chopped tomatoes
1 small onion,chopped
cayenne pepper
salt/Seasoning Cube

Place the coconut milk in a pan and bring to the boil. Add the rice, crayfish, tomatoes and onions
season with cayenne pepper and salt. Cover and steam until the rice is cooked and quite dry.
Fluff with a fork and serve as accompaniment
