Jamaican Curry Chicken and potatoes with Scotch Bonnet Peppers, Origin:Jamaica
4tbspolive oil
1yellow onion,chopped
1tspminced ginger
1 small Scotch Bonnet pepper,minced
1/2stick butter
2tbspJamaican curry
11/2 pounds chicken,chopped
2 large russet potatoes,chopped
1can coconut milk
chicken stock
Heat oil,Sauté ginger/pepper/Onions fr 8min,add butter/curry powder nd let sit til it trns dark gold,Add chicken,cook fr 8min,add potatoes/Coconut Milk
Simmer for 30mins,Serve
