12egg yolks
225g caster sugar
600ml double cream
600ml milk

Combine flowers,milk/cream in large pan,slowly bring to boil,Meanwhile,beat eggs yolks,sugar in large heat-proof bowl until pale and creamy

Hot Chocolate.

3 1/2 cups sugar
2 1/4 cups cocoa
1 tablespoon table salt
Whole milk
Whipped cream/mashmellow (optional)

In a bowl, combine sugar, cocoa, and salt, and whisk to combine well. Store mixture in an airtight container.

pour 1 cup whole milk into a microwave-safe mug, & microwave on high just until hot. Add 2 tablespoons of cocoa mix, and stir to dissolve. Top with mashmellow or whipped cream.

Creamy Garlic Pasta

2 tsp olive oil
4 cloves garlic
2 tsp butter
¼ tsp salt &pepper
3 cups chicken stock
pasta
1 cup parmesan cheese
¾ cup heavy cream
2 tsp chopped fresh parsley

In a pot, simmer oil. Add garlic, allow cook for 2 mins. Mix butter until melted. Add salt, pepper &stock. Turn heat high & let it come to a boil.

Add pasta & cook till soft. Pour in cheese until melted. Turn off heat &stir cream & parsley

Ukpo Ogede(Overipe plantain) Origin: Nigeria
1kg over-ripe plantain
150g plantain flour
2chillies/Onions pounded
4tbsp red palm oil/Salt
8 washed banana leaves or tin

Mash plantain then stir in plantain flour nd othr ingrdnts,use a tbsp nd scoop mxtre into individual leaves,steam for 45mins
Serve with fried pepper Sauce(recipe coming up soon)

Jamaican Jerk chicken, origin: Jamaica (if u haven't had Jerk chicken,dunno wht u waiting for!
1 whole chicken, halved
1 lime,halved
salt(pinch)
5tsp Jerk Rub seasoning
8 to 12 pimento (allspice) leaves, for flavor

Rub chicken with lime/ salt nd Jerk seasoning,Marinate ovrnight,preheat bbq grill to medium/high,use pimento on d grill,grill fr 45mins
Let chicken sit fr 10mins bfr cutting into quarters

Alternatively u can use ur oven nd preheat to 375dgreesF.

4tbspolive oil
1yellow onion,chopped
1tspminced ginger
1 small Scotch Bonnet pepper,minced
1/2stick butter
2tbspJamaican curry
11/2 pounds chicken,chopped
2 large russet potatoes,chopped
1can coconut milk
chicken stock
Heat oil,Sauté ginger/pepper/Onions fr 8min,add butter/curry powder nd let sit til it trns dark gold,Add chicken,cook fr 8min,add potatoes/Coconut Milk
Simmer for 30mins,Serve

Vanilla Wafers Cookies.

1/2 cup butter, softened
1/2 cup sugar
1 egg
2 tbsp vanilla extract
2 cups all-purpose flour
3/4 tsp baking powder
1/4 tsp salt

In a large bowl, mix butter & sugar until fluffy. Beat in egg & vanilla. Combine dry ingredients to mixture & mix well.
Drop 2 tablespoons each onto baking sheets/pan. Bake at 350° 15 mins

Fruit Dip

Fruit Dip
1 cup milk
2 cup whipped cream
1/2 cup flaked coconut
1 cup of sliced pineapples
Assorted fresh fruits

In a small bowl, milk & cream until fluffy. Fold in pineapple and coconut. Chill for 20 mins in fridge. Serve with fruit.

* any fruit of your choice.

Smoked fish/Stock fish
2 little slices yam or cocoyam for  thickening
uziza leaves
Pepper/Onions
Seasoning cubes/salt/water
Half a tsp of peppersoup spices(optional)

Boil meat,stockfish wth salt nd pepper,add water to ur satisfaction,chck fr salt and seasoning,spices
add d slices of yam or pounded cocoyam nd smoked fish,cover,simmer,stir until thick,add d chopped uziza,simmer for 2min

1cup Evaporated Lowfat Milk
1/2 cup light sour cream
1tspsalt
1/2tsp ground black pepper
2cups,shredded cheddar cheese
6slices turkey bacon,cooked/Crumbled
Sliced green onions

Boil potatoes,preheat oven to 350dgrsF,grease casserole dish,mix all ingrdnts in a bowl,spoon mxtre into dish,bake fr 25min,add rem cheese/bacon bake fr 3min mre

Boil your meats in a pot,boil until little stock is left,add crayfish,palmoil,pepper nd periwinkles,cook fr 5min,add waterleaf,simmer fr 3min,then add ugwu,chck fr seasoning,stir fr 5mins to avoid burning
